Center of Excellence for Food Safety publishes article on cooling foods
Kevin Roberts, Carol Shanklin, Kevin Sauer and Jeannie Sneed, researchers with the Center of Excellence for Food Safety Research in Child Nutrition Programs, had an article titled "Cooling of foods in retail foodservice operations" published in the January-February 2013 issue of Food Protection Trends.
Improper or slow cooling of food has been identified as a leading contributing factor to foodborne illness outbreaks. This research demonstrates the effectiveness of various cooling methods in meeting the FDA Food Code time and temperature recommendations for safe cooling.
